Candlemas crêpes with CBD butter: a homemade recipe

For Candlemas, this recipe keeps the crêpes thin and classic, with sugar and lemon, but replaces the usual cooking butter with a CBD butter spread cold onto the already-cooked crêpe. Spreading it cold avoids exposing the CBD to the heat of the pan, a precaution that remains reserved for strictly personal use.

Why spread the butter cold

Butter melted in a hot pan goes well beyond the 70 °C above which CBD begins to degrade. By preparing it cold, as a softened butter mixed with CBD oil away from any cooking, you avoid that loss and keep a more predictable distribution from one crêpe to the next.

The recipe — about 10 thin crêpes

Batter ingredients

  • 250 g flour
  • 4 eggs
  • 500 ml milk
  • 20 g melted butter (for the batter only)
  • 1 tablespoon sugar
  • A pinch of salt

CBD butter ingredients

  • 60 g softened butter (taken out of the fridge and left to soften at room temperature)
  • CBD oil, in a quantity adjusted to your personal use
  • Caster sugar and lemon juice, for the classic filling

Method

  1. Mix the flour, sugar and salt, then work in the eggs and the milk gradually to obtain a smooth, fluid batter with no lumps.
  2. Add the melted butter and leave the batter to rest for 30 minutes.
  3. Cook the crêpes in a hot, lightly greased pan, one to two minutes per side, then set them aside on a plate.
  4. While the crêpes cool slightly, mix the softened butter with the CBD oil in a bowl, at room temperature, until the texture is even.
  5. Spread each crêpe with a thin layer of CBD butter, sprinkle with sugar, add a dash of lemon juice, then fold into quarters.

Dosage and precautions

An oil at 5% (50 mg/ml) mixed in at 3 ml into 60 g of softened butter brings around 150 mg of CBD to the whole preparation, that is about 15 mg per crêpe if the butter is spread over 10 crêpes. That is far above the provisionally safe daily dose set by the EFSA in February 2026, of around 2 mg per day for a 70 kg adult. Reduce the amount of oil or the portion of butter per crêpe to stay sensible, and check the certificate of analysis of the product you use. This recipe is not advised for women who are pregnant, breastfeeding or of childbearing age, for minors, or for people on medical treatment.

What to know before serving

This recipe is not intended for sale: since 15 May 2026, food preparations containing ingested CBD have been withdrawn from the French market for want of Novel Food authorisation. Set aside some crêpes without CBD butter for guests who do not take it, and label the filled crêpes clearly.

CBD is not a medicine. In cases of persistent stress or insomnia, consult a healthcare professional.

Frequently asked questions

Can the CBD butter be kept for other uses?

Yes, it keeps like ordinary butter, wrapped in the fridge for a few days, as long as it is not reheated above 70 °C.

Why not simply add the CBD oil to the crêpe batter?

Cooking in a pan goes well beyond the degradation threshold of CBD. Spreading a cold butter after cooking gives a more reliable result that is easier to dose.

Can the butter be replaced with a plant-based margarine?

Yes, provided it is soft enough at room temperature to blend well with the CBD oil without heating.

Is this recipe suitable for a festive meal with guests?

With caution: always inform your guests, offer a CBD-free alternative and avoid any confusion over the portions served.
