Homemade CBD mayonnaise: the recipe for hot dogs and crisps

For a successful CBD mayonnaise, the hemp oil goes in cold, right at the end of the emulsion, into a classic base of egg yolk, mustard and neutral oil. Allow ten minutes of preparation for a sauce firm enough to coat a hot dog and loose enough to dip crisps into. The dose is worked out per serving, never per whole bowl.

The ingredients for four people
- 2 egg yolks at room temperature
- 1 teaspoon of Dijon mustard
- 250 ml of neutral oil (sunflower or grapeseed)
- 1 tablespoon of cider vinegar or lemon juice
- CBD oil, full spectrum or isolate, dosed to suit your habits (see below)
- Salt, pepper
The recipe step by step
- Whisk the egg yolks with the mustard until the mixture is smooth.
- Pour in the oil in a thin stream, whisking continuously, until the mayonnaise thickens.
- Add the vinegar or lemon juice to loosen the texture slightly.
- Stir in the CBD oil once the mayonnaise has come together, mixing gently, away from any source of heat.
- Adjust the seasoning, cover with cling film touching the surface and chill before serving.
CBD copes poorly with cooking: heat degrades some of its compounds. That is why it always goes in last, into a preparation that is already cold.
Getting the CBD dose right in a fatty sauce
A fat such as sunflower oil helps the CBD disperse evenly, unlike a water-based base. EFSA recommends not exceeding around 2 mg of CBD a day for a 70 kg adult, on the current state of the data. Work out the total dose you are aiming for in the bowl, then divide it by the number of guests to estimate the individual portion.
A calculator and a kitchen scale are enough: measure the total volume of mayonnaise, take the concentration stated on your bottle of CBD oil, then adjust the quantity you add. This step, often skipped, avoids an effect that is felt very unevenly from one guest to the next.
How to serve CBD mayonnaise
This mayonnaise goes with a classic hot dog (soft roll, grilled sausage, fried onions) or a bowl of thick kettle crisps. It also works with crunchy vegetables for a lighter version. Make it the day before to let the flavours settle, and serve it cold, never reheated.
Common mistakes to avoid
The most frequent mistake is dosing by the whole bowl rather than by the serving, which produces an effect that is too concentrated for some guests and too weak for others. The second mistake is adding the CBD oil too early, during the whisking: prolonged friction and exposure to air can degrade part of it.
Frequently asked questions
Can the CBD oil be replaced with infused flowers?
Yes, provided you first infuse the flowers in the neutral oil, at a low temperature and with a fat. Without a fat, extraction stays limited and the effect becomes unpredictable.
Which CBD oil should I choose for cooking?
Choose an oil that comes with a certificate of analysis (CoA) stating the CBD and THC levels. THC must stay at or below 0.30 % in the finished product, the limit set by the Conseil d'État in 2022.
How long does CBD mayonnaise keep?
Two to three days in the fridge in an airtight container, like any homemade mayonnaise containing raw egg.
Can you drive after eating it?
Caution is called for. A full-spectrum product can make a saliva test positive for THC, even within the legal limits. It is better not to take the wheel straight after the meal.
