Can you cook a CBD pizza? What the French framework says

Cooking a CBD pizza raises two distinct problems: the heat of the oven degrades a large share of the cannabidiol above 160-180 °C, and since 15 May 2026 prepared CBD dishes without Novel Food authorisation have been withdrawn from the French commercial market. For personal use, CBD oil is still added cold, after cooking.

Why cooking is a problem

CBD is a molecule sensitive to prolonged heat. Exposure above 160-180 °C, such as that of a conventional pizza oven (220-250 °C), degrades a significant share of it within minutes, reducing by the same amount the quantity actually present in the finished dish. That is why serious recipes recommend adding the CBD oil once the pizza is out of the oven, never in the dough or worked into the cooking.

The Novel Food framework, decisive since 2026

A CBD pizza, as a food preparation, falls within the scope of EU Regulation 2015/2283 on novel foods. Since 15 May 2026, the Direction générale de l'alimentation (DGAL) has been withdrawing from the market any CBD food product lacking European authorisation. In practical terms, a pizzeria may no longer sell a CBD pizza in France, whatever the stated content.

What remains possible: personal use

Nothing prevents a private individual from adding, at home, a few drops of CBD oil to their own pizza, for their own consumption. That practice is neither a sale nor a placing on the market within the meaning of the European regulation. It presupposes already owning a legal CBD oil (THC ≤ 0.30 % in the finished product, in line with the Conseil d'État decision of 29 December 2022) and not serving it to guests without telling them. The dosage to keep in mind

EFSA published on 9 February 2026 a provisionally safe daily dose of 0.0275 mg per kg of body weight, or around 2 mg per day for a 70 kg adult. A simple drizzle of CBD oil over a slice of pizza frequently exceeds that threshold: a few drops are enough, and under-dosing is better than over-dosing.

Alternatives that avoid cooking

To avoid any thermal degradation, some prefer to dip their already-baked, cooled pizza into a CBD-flavoured sauce or oil, or to add it straight onto the plate at the moment of serving. These methods guarantee that the molecule undergoes no high-temperature exposure at all.
