No-bake CBD cheesecake: a homemade recipe

A no-bake CBD cheesecake is made by folding the CBD oil straight into the cream cheese filling, cold, which avoids any thermal degradation of the molecule. In France, this recipe is strictly for personal use, CBD desserts having been withdrawn from the commercial market since 15 May 2026.

The framework to know before you cook

Since 15 May 2026, the Directorate General for Food (DGAL) has been withdrawing CBD food products without European authorisation from the French market, under EU regulation 2015/2283. This recipe assumes you already hold a legal CBD oil for your own consumption, with no resale and no serving to guests who have not been told.

Why the no-bake version suits CBD

A classic cheesecake goes into a low oven (140-150 °C) for 45 to 60 minutes, an exposure that degrades some of the CBD if the oil is added before baking. The no-bake version avoids the problem entirely: it sets in the fridge, with no heat at all, which better preserves the molecule added to the filling.

The recipe, for 6 portions

For the base: 200 g of speculoos-style biscuits, 80 g of melted butter. For the filling: 400 g of cream cheese such as Philadelphia, 200 g of well-chilled double cream, 80 g of icing sugar, the zest of one lemon, 4 g of gelatine (2 leaves). For the dose: your CBD oil, according to your own personal use.

Method: blitz the biscuits, mix with the melted butter, press into the bottom of a springform tin and chill. Soften the gelatine in cold water, squeeze it out and melt it in two tablespoons of warm cream. Whisk the cream cheese with the icing sugar and lemon zest, whip the cream to soft peaks, then fold it in gently along with the melted gelatine. Add your CBD oil at this stage, away from any heat source. Pour over the biscuit base, smooth the top and chill for at least 4 hours before turning out.

Dosage: staying under the provisional daily dose

If you fold 3 ml of a 5 % oil (50 mg/ml) into the filling for 6 portions, you add around 150 mg of CBD, or 25 mg per slice. That is far above the provisional safe daily dose published by EFSA on 9 February 2026, set at 0.0275 mg/kg/day, or about 2 mg for a 70 kg adult. For more cautious use, limit yourself to a few drops spread across one portion, once a day at most.

Variations and storage

Swap the speculoos for plain biscuits for a more neutral base, or add a red berry coulis when serving. The cheesecake keeps for three days in the fridge, in an airtight container. Can you bake this cheesecake in the oven anyway?

It is not advisable if you add the CBD oil before baking: the oven's heat degrades part of the molecule. The no-bake version avoids the problem.

How long does it need to set in the fridge?

At least 4 hours, ideally a full night, so that the filling is firm enough to turn out.

Can gelatine be replaced with agar-agar?

Yes — use about 2 g of agar-agar brought to the boil in a little cream, then left to cool slightly before folding it into the filling along with the CBD oil.

Can you serve this dessert to guests?

No, unless everyone has been told explicitly and has agreed beforehand. Since 15 May 2026, CBD desserts can no longer be sold in France.
